HCLF Vegan Lunch Go-To's!

Starting off my new blog with a food post, why not eh!
I've been vegan for 7 months now and it was the best thing I have ever committed to. I feel healthier, leaner and happier knowing I'm helping the animals and my own body. 

Non vegan eaters tend to only think that being vegan means only consuming fruit and veg but oh no! There are millions of different routes depending on how your body works. I currently follow a high carb, low/no fat vegan lifestyle meaning I eat unlimited carbs with the added greens, no calorie restrictions and I love it!  


So here are my three current favourite lunch go-to's!

{{1}} Simple Puy Lentil Salad
If you're a vegan reading this post and haven't tried puy lentils yet, ooh girrrrl go to Tesco and get a pouch! They almost have a slight walkers crisps beef and onion smell but so nice mixed into a spinach, cucumber, red pepper and sweetcorn salad. It just gives the salad a bit of bulk and keeps you satisfied for much longer. I also always dress my salads or any foods thinking about it now with sweet chilli sauce. I am obsessed!
My cute and amazingly huge wooden bowl is from asda for only £1 too!

{{2}} Vegetables and Rice with a Vegan Cheez Sauce
This is quite a staple lunch for me currently as its so cheap and nutritious but only recently did I try out this cheez sauce made from my favourite thing in the world, nutritional yeast! I used to love cheese like everyone when I was eating a standard 'normal' diet so this sauce just blew my mind.
Its made from nutritional yeast {{I use engevita}}, one potato and carrot boiled, a bit of dairy free milk and seasonings to taste. If you would like a full recipe post or video let me know!
But yeah, underneath all that cheezy cat sick looking goodness is half a cup of white and half a cup of brown rice, broccoli, cauliflower, carrots and kale! So yummy!

 {{3}}Cinnamon Pancakes with Fresh Fruit
This recipe for sure is a firm favourite of mine purely because the ingredients are so simple! The pancakes themselves are only made from three ingredients, 1 cup of flour of your choice {{I used plain in this}}, enough water so it becomes a pancake type batter and a teaspoon of baking powder {{if you want american style pancakes}}. Then go to town on the fruits of your choice! I used a banana which is hidden between the cakes, a kiwi and a flat peach on the side!
